… CRAFT ROASTING STARTS WITH QUALITY RAW ORGANIC COFFEE BEANS…

First, we only purchase organically grown beans that have achieved the highest grading marks from experts on the field. We peruse the inventory and shipping schedule of national importers, scrutinizing their cupping notes and ordering samples to test for beautiful flavors. As you can imagine, the entire process is a joy in itself. We insist on organic certification for the beans going into our roasts and have a strong bias toward Fair Trade certification, when available.

… CRAFT ROASTING RELIES HEAVILY ON HUMAN SENSES …

As beans tumble and turn in a hot roasting drum, we monitor the smells and the sight of the beans using a small sampler device and a sight hole in the roaster’s lid designed over a century ago for this very purpose. The initial application of heat needs to be intense as the beans begin their transformation. As the beans go from green colors and grassy aroma toward a smell akin to baking bread, a light cinnamon color begins to appear on the outside of the bean. It is at this point that smoke gathers in the roasting chamber and the slightest of ventilation can remove it while slightly reducing the heat applied to the beans.

This is where the art of roasting occurs and where each bean needs to be evaluated and adjusted at the three roast levels of light, medium and dark. Some beans give their best contributions at a light roast. Others bring amazing flavors to your cup as a medium or dark roast. But the craft of navigating a roasting cycle involves finesse. With Royal 5 roasting, we adjust heat levels, adjust venting in the roasting drum, tuning the roasting process along the way. It is a finely tuned craft.

… CRAFT ROASTING FINISHES WITH QUICK COOLING

The chemistry of roasting involves development of sugars that occur naturally in the beans. When you brew your coffee, you are extracting flavors and sugars from the beans and this is where the cooling method makes all the difference in the world! The beans must be cooled quickly, in under 4 minutes, to crystalize the sugars at a finer molecular level for easier extraction. Without quick cooling, the sugars remain in your discarded grounds and the aftertaste to your coffee is bitter. Royal 5 coffees have a smooth, full-bodied, clean aftertaste. Many of our new clients who formerly added sugar to their coffee have exclaimed, “I don’t even need sugar in this coffee!”
